Since opening Field & Fork over one year ago, Janet brings her aptitude for hospitality and customer service to Chichester and Sam brings his highly regarded professional expertise as a chef. In Field & Fork's Gallery restaurant they have created a unique eatery for the people of Chichester that offers a simple yet sophisticated dining experience.
Sam took his first step on the culinary ladder when he became a 3 Star Michelin apprentice at Le Gavroche from the age of 16. While working in the kitchens of the acclaimed Roux brothers, Sam was held in high esteem by Albert. And because he is a true professional, Sam is highly respected amongst his team and industry peers today.
Never striving for celebrity chef status himself and while learning the ropes from Albert Roux and his son Michel, Sam also worked with some of the trade's favourite TV faces from Gordon Ramsey to Gary Rhodes. His skill and reputation have since made him a popular choice among pop icons, celebrities and politicians alike. Read about events and private parties we cater for.
After graduating from Bournemouth University with an HND in Hotel Management, Janet also began her professional career as a restaurateur with the Roux brothers. She excelled and went on to manage some of the finest restaurants in London before lending her expertise to the Grand Hotel in Amsterdam, where she was introduced to Sam.
Sam's career took him worldwide and he soon gained international status in North American, East Asian and European restaurants. He reached head chef status in a New York hotel and mastered oriental cuisine in a Japanese Sashimi bar.
The couple's experience grounded a sound basis for the hands on hospitality, excellent standard of customer service and quality food that defines Field and Fork. The Mahoney partnership behind Field & Fork are, together, a formidable force.
As a a rare breed of chef, Sam uses his knowledge and skills to transform everyday ingredients into interesting and creative food for everyday dining and no one else in the Chichester restaurant trade can boast his pedigree of background. He was taught by the finest in French culinary art and gained global experience, which allows him to create the exceptional Modern British cuisine that comes from his kitchens today.
As Janet was originally from the area and she has an affinity with this part of the South Coast the pair decided that this would be the ideal place to start a family and build a business. The Mahoneys have now been based in the area for ten years and decided to launch their brand new company in Chichester in 2008.
